SUBJECT: Dining Service Operations
DESCRIPTION: In order to better meet the demands created by the number of students who will be housed in the Living Learning Center and the expanded dining service and business operations, the Memorial Union administration is proposing restructuring its administrative staffing, adding two new positions and reallocating two existing positions.
In the proposal, the current position of Director of Food Service would be retitled Director of Dining Services Operations and would have the responsibility of overseeing the food management team operating the type of service which will be offered beginning next fall. The Stauffer Commons will house a state-of-the-art marketplace with five dining stations featuring display cooking and rotating menus to provide variety and diversity, home-style healthy meals, foods grilled to order, gourmet sandwiches, fresh crisp salad fixings, and classic brick-oven pizza pies. Because of the more comprehensive nature of the restructured position and responsibilities, the annual basic salary range for this position will need to be increased to $42,000 to $46,000.
The current position of Assistant Director in the Memorial Union, (Kathy Reser) would be reallocated to Associate Director of Memorial Union Operations and her position responsibilities expanded to include duties relating to conference services to be offered through the Memorial Union. Salary range for the position would remain at the current level.
Two new positions are proposed: an Executive Chef and an Assistant Director for Memorial Union Business Services. The duties for the newly created Assistant Director position will include overseeing Dining Services until the new management team is in place, improving and expanding the debit card program and student ID system, starting up and overseeing a copy center, and assisting all Memorial Union operations with business services and marketing. Ms. Janel Rutherford, the incumbent food service director, has agreed to assume this position. A search is currently underway for a new director for the Dining Services Operations. Once that position is filled, a search will be initiated for the Executive Chef position.
FINANCIAL IMPLICATIONS: Increasing the salary for the Director of Dining Operations, position number 90000-01-1 by $600 to $4,000 from $41,400 or a total annual basic salary range of $42,000 to $46,000 depending upon qualifications on date of hire; new Assistant Director of Memorial Union Business Services, position number 97000-03-1, for an annual basic salary of $37,608; new Executive Chef, position number 90000-03-1, at an annual basic salary range of $25,000 to $30,000 depending upon qualifications on date of hire; and Associate Director of Memorial Union Operations, position number 97000-02-1, no additional funding required. Additional funding for new positions will be covered from current operating budgets of Dining Services and the Memorial Union.
RECOMMENDATION: President Farley recommends the Board of Regents approve the restructuring of administrative positions within the Memorial Union operations, and the addition of two new positions for Assistant Director of Memorial Union Business Services and Executive Chef.
